Spiced Cumin Lentil Stew

Ingredients:
1 cup red lentils
1 onion diced
2 cloves garlic
1 tsp cumin seed toasted
1 tsp coriander ground
1 tsp curry powder
1 tsp applewood smoked sea salt
4 cups vegetable broth
1 cup diced tomatoes
fresh cilantro

Instructions:
1. Toast cumin seeds in pot.
2. Add onion and garlic and sauté.
3. Add lentils, tomatoes, spices, and broth.
4. Simmer 25 minutes.
5. Garnish with cilantro and serve warm.
